a frozen treat...and a bonus!


since i'm up to my eyeballs in blueberries...and it's been a hot summer...i thought i would try to make a cold treat with some of the blueberries i picked.  i found this recipe for a blueberry granita and thought it sounded pretty easy and quite yummy.  it looked so yummy i doubled the recipe!

i put 5 cups of blueberries and 1 cup of sugar in the blender.  if you have a food processor you could use that instead.  (but i don't, so i used what i had!)



and i just blended it until it was smooth.





i strained the sweetened blueberry puree right into a glass baking dish to eliminate the chunky skins and seeds.


 
 

then i added 1 and 1/2 cups of water and the juice of one lemon, and i mixed it thoroughly.



then i popped it in the freezer.  after an hour, i checked to see if it was frozen...it wasn't, but i ran my fork through it to keep it nicely mixed.  i kept checking every hour or so and kept scraping it with a fork...



and then it's an icy blueberry treat!  (even if you can't quite tell it's frozen in the picture!)

i love that it tastes a little tart, and the cold treat is nice on a hot day!

then i really got to thinking...wouldn't this make a fun addition to a summer cocktail?  even just a scoop with a glass of wine would be divine.  so, i tried it!

i made a little vodka cocktail...

first i filled my glass about half full with the granita...



then i filled it with a few ice cubes...



then i added vodka...my preferred 'whipped' pinnacle vodka makes everything have a little sweet and creamy flavor...



and then i topped it off with some seltzer...because everything tastes better when it's fizzy!

pretty easy, right?!  it's so refreshing...a little sweet...and totally delicious!  and it is good with wine too...i bet red or white would be good. i added a couple little scoops of the blueberry granita to some pinot grigio...delish!!
