sunday yumday!

with summer winding down and fall fast approaching...(how can that be?!  this was a fantastic summer and despite trying to soak it all up, it flew right by!)...mike and i can't help ourselves from wanting comfort food.  this weekend, with the air a little cooler in the mornings and evenings, made it easy for us to jump right on board...we made meatloaf!

now, i have to admit...i'm not the biggest fan of meatloaf, but this recipe mike and i have made a couple times and it is quite tasty.  i don't know what it is about meatloaf that makes me think, 'eh', but i'm willing to make it and eat it because mike loooves it!

the recipe comes right from lea & perrins, you know, the original worcestershire sauce folks.  we altered it slightly due to *cough*cough* someone's distaste for onions.  (love you honey!)  we also opted to use our broiler pan to rescue the cooking/cooked meat from all the extra grease and juices.  (we've made one in a loaf pan before and it was a greasy mess, so now we make sure there's room for the juices to escape.  and trust me, it's plenty juicy!)

servings: 8
prep time: 15 minutes  
cook time: 1 hour 

  • 1/3 cup lea & perrins® the original worcestershire sauce
  • 2 pounds ground beef
  • 2 eggs
  • 1 cup plain dry breadcrumbs (we used 1/2 seasoned panko - it was open - and 1/2 plain breadcrumbs because that's what was to be opened next!)
  • 1/3 cup onion, finely chopped-- we replaced this with about 1/2 cup grated parmesan
  • 1/4 cup ketchup



preheat oven to 350.

in a large bowl, combine all the ingredients.

i find using your hands to blend this mixture works best.

shape into a loaf and place on a broiler pan.  *optional: sprinkle top with additional lea & perrins® worcestershire sauce.

bake uncovered 1 hour or until done. let stand 10 minutes before serving.

and then you have a delicious meatloaf for dinner!
